Summer Institute Accelerator Program

Recent graduate creates Eggcitables business after participating in entrepreneurial internship at St. Francis Xavier University.

In 2017, I was pursuing an entrepreneurship degree at St. Francis Xavier University. During that time, the Extension department created the Wallace Family Internship; a twelve week independent internship program where students developed an entrepreneurial idea. Knowing I wanted to pursue my own business one day, I applied to the internship with a chickpea-based vegan egg substitute, a recipe that I used personally for several years. The internship included mentorship, workshops on various business elements (accounting, legal, canvasing, etc), and pitching. After the internship concluded, I still had the desire to pursue my business full time. Over my last year in university, I used my business idea for several class projects and competed in a number of business competitions. Upon graduation, I began the Summer Institute Accelerator program in Fredericton NB. Over the course of that program, I developed an MVP, created logos and packaging, built a concrete business model, and began selling. In July 2018, Eggcitables was officially launched and I have been working full time on the business ever since.
